On the Edge of Fall

QUICKLY approaching one year here in AK! Unbelievable.

This week has been a bit of a dreary one — we all got sick. I think it was a combination of our marathon-binge to say goodbye to everyone and our double header kickball game followed by 3-on-3 soccer last weekend…ending at 11p. Things in Alaska are going pretty well, settling down nicely. We are back to having only three people in our house — a welcome and peaceful change. In fact, Aunt K is heading to Florida to visit, and then her and G will both be heading to Arkansas to see family. It’ll be….JUST me! Madness.

We officially said goodbye to: Max, Solveig, Molly and Clark last weekend. Now we are down to the skeleton crew, and Garrett. But he wont be leaving until October, so we have a little time to digest that one :)

Mostly I’m stoked because I’ve been back in the kitchen and cooking up a storm — I have tried some of THE best recipes lately, filling and yet unbelievably healthy. Diced caprese salad with chilled quinoa, pumpkin pie overnight oats, grilled eggplant with a caprese topping to name a few. Hit me up if you’d like the recipes!

In other news:

  • I had my school orientation last Wednesday, and I’ve officially got my books. Off and running! I LOVED my professors. I also got the opportunity to meet three of my fellow students. One is an architect who moved here three weeks ago from Chicago, another is from Iowa and works for the National Park Service running a migratory bird program. All seem really interesting — I’m excited!
  • Nordstrom FINALLY stocked my perfect fall boots. Two years in the making and I’m SO excited. They are to die for. AND they came in the mail. Pics to come soon!
  • Tuesday night races start ON my birthday this year — hello fate!
  • Ghostland Observatory will be back for the first tap in October again this year — yes!
  • I gave up drinking coffee — this is day four. I’ve replaced my coffee with a veggie juice. Yes, I am the one with a fear of drinking veggies, and yes, I’m drinking veggie juice. So far I’ve only had carrot and beet, but…I like it. A lot.
  • I finally found a new running skirt at Target the other day (really, all good things come from Target!) and its just sunny enough today to use it. Dreamy. Speaking of which — its been a little chilly, but SUNNY the past three days, and you would think it was 100* outside. After that month of rain Alaskan’s are sure ready for some fun in the sun!
  • This weekend is full of fun relaxing things: girls day, yoga, EMS volunteering, long runs, sunshine, birthday dinners, and hopefully just a little bit of doing…nothing. Sometimes it really is the simple things!

Next week: school starts, the fair starts, AND I start my morning work out plan (great time to give up coffee right?! haha). New week, new me!
